Christmassy Banana Cake

This is a lovely banana cake that would suit perfectly any cake table during the coming holidays. The cake is moist and tasty, and the use of cinnamon, cloves and ginger automatically give it a very Christmassy flavour.

INGREDIENTS

  • 2 eggs
  • 250 ml sugar
  • 100 g melted butter
  • 500 ml plain flour
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cloves
  • 2 tsp baking powder
  • 2 tsp vanilla sugar
  • 2-3 ripe bananas, chopped
  • 200 grams plain yogurt

INSTRUCTIONS

  1. Whisk eggs with sugar, add melted butter.
  2. Mix the dry ingredients.
  3. Puree bananas, mix with the yogurt.
  4. Add the dry mix and banana mix to the egg and sugar mixture.
  5. Pour the batter into a buttered round bundt tin and bake in the middle of the 175˚C oven for 60 minutes.
  6. Cover with a chocolate glaze and chopped roasted hazelnuts.
